Ingredients

  • 2 pieces Boneless, skinless chicken breast
  • 2 cups Low-sodium chicken broth
  • 2 stalks Celery
  • 0.25 cup Red onion
  • 0.5 cup Plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 0.25 cup Dried cranberries
  • 0.25 cup Pecans
  • 2 tablespoons Fresh dill, chopped
  • 0.25 teaspoon Freshly ground black pepper
  • 4 pieces Whole grain croissants
  • 4 pieces Lettuce leaves

Directions

Step 1

Place the chicken breasts in a saucepan and cover with low-sodium chicken broth.

Step 2

Bring to a boil, then reduce the heat to simmer and cover. Cook for about 15 minutes or until the chicken is cooked through and no longer pink inside.

Remove the chicken from the broth and let it cool. Once cooled, shred the chicken with two forks.

Chop the celery into small pieces, and finely dice the red onion.
