Preheat the oven to 400°F (200°C).
In a pan, heat olive oil over medium heat, and add chopped onion. Sauté for 2-3 minutes until translucent.
Add minced garlic to the pan and cook for another minute.
Cut the chicken breast into small bite-sized pieces and add to the pan. Cook for 5-6 minutes until browned.
Stir in chopped spinach and cook until wilted, about 2 minutes.
Pour in the low-sodium chicken broth, salt, and black pepper. Allow the mixture to simmer for 5 minutes, stirring occasionally.
Remove from heat and let the mixture cool slightly.
On a lightly floured surface, unfold the whole wheat puff pastry sheet and cut it into 4 equal squares.
