Ingredients

  • 12 ounces Whole wheat egg noodles
  • 2 tablespoons Olive oil
  • 1 pound Boneless, skinless chicken breast, diced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 stalks Celery, chopped
  • 2 medium Carrots, chopped
  • 2 cups Low-sodium chicken broth
  • 15 ounces Unsalted diced tomatoes, with juices
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 cup Low-fat plain Greek yogurt
  • 2 tablespoons Fresh parsley, chopped
  • 0.5 teaspoon Freshly ground black pepper
  • 1 teaspoon Salt-free herb seasoning blend

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Cook the whole wheat noodles according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium heat. Add the diced chicken breast and cook until browned and cooked through, about 8-10 minutes. Remove the chicken and set aside.
