Ingredients

  • 8 ounces Rice noodles
  • 1 pound Skinless chicken breast
  • 2 tablespoons Olive oil
  • 3 tablespoons Low-sodium soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Fresh ginger, minced
  • 2 cloves Garlic cloves, minced
  • 1 medium Red bell pepper, thinly sliced
  • 2 cups Bok choy, chopped
  • 3 pieces Green onions, sliced
  • 1 cup Bean sprouts
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Soak the rice noodles in warm water according to the package instructions, usually about 20 minutes or until softened. Drain and set aside.

Step 2

Slice the chicken breast into thin strips. Season with salt and black pepper.

Step 3

In a large non-stick skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.

Add the chicken strips to the skillet and stir-fry until just cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
