  • 1 large onion, finely chopped
  • 2 celery stalks, diced
  • 2 medium carrots, peeled and diced
  • 3 garlic cloves, minced
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 cups low-sodium chicken broth
  • 1 cup wild rice, rinsed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 0.5 teaspoon black pepper, freshly ground
  • 0.5 teaspoon salt
  • 2 cups kale, chopped
  • 0.25 cup fresh parsley, chopped
  • 2 tablespoons lemon juice

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Add the chopped onion, celery, and carrots. Sauté for about 5 minutes, or until the vegetables begin to soften.

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the chicken pieces to the pot and cook for about 5-7 minutes, stirring occasionally until the chicken is browned on all sides.

Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 45 minutes, or until the wild rice is tender.

Step 7

Remove the bay leaf and discard it.
