  • 1 pound skinless boneless chicken breast
  • 2 tablespoons olive oil
  • 1 medium yellow onion
  • 3 garlic cloves
  • 2 medium carrots
  • 2 celery stalks
  • 1 pound assorted mushrooms (such as cremini, shiitake, and button)
  • 4 cups low-sodium chicken broth
  • 1 teaspoon fresh thyme
  • 1 teaspoon fresh rosemary
  • 1 bay leaf
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley

Directions

Step 1

Cut the chicken breast into bite-sized pieces. Season lightly with black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium-high heat. Add the chicken pieces and sear until browned on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
