  • 1 medium green bell pepper, chopped
  • 3 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1 pinch saffron threads
  • 4 cups low-sodium chicken broth
  • 1 14.5-ounce can diced tomatoes, drained
  • 1.5 cups short-grain rice (such as Arborio or Valencia)
  • 1 cup frozen peas
  • 0.25 cup fresh parsley, chopped
  • 1 lemon, cut into wedges
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large, deep skillet or paella pan over medium-high heat.

Add the chicken pieces and cook until lightly browned on all sides, about 5-7 minutes. Remove the chicken from the pan and set aside.
