Ingredients

  • 8 ounces whole wheat fettuccine
  • 2 pieces skinless boneless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic
  • 1 cup low-sodium chicken broth
  • 1 cup low-fat milk
  • 2 tablespoons cornstarch
  • 0.5 cup Parmesan cheese
  • 2 cups fresh spinach
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon salt (optional)
  • 0.125 teaspoon nutmeg

Directions

Step 1

Cook the whole wheat fettuccine according to package instructions, omitting added salt. Drain and set aside.

Step 2

While pasta is cooking, cut the chicken breasts into bite-sized pieces.

Step 3

In a large non-stick skillet, heat 1 tablespoon of olive oil over medium heat. Add the chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Add minced garlic and sauté for 1 minute until fragrant.
