  • 0.5 cup red bell pepper
  • 2 stalks green onions
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0 olive oil cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Lightly spray a 12-cup muffin tin with olive oil cooking spray to prevent sticking.

Chop the green onions finely, including the green tops.

Step 6

Step 9

Place the muffin tin in the preheated oven and bake for 18 to 20 minutes, or until the egg bites are set and slightly golden on top.

Remove from the oven and allow to cool for a few minutes before serving.

Step 11

Serve warm or at room temperature. These can be stored in the refrigerator for up to 3 days in an airtight container.
