Ingredients

  • 12 ounces whole grain spaghetti
  • 1 tablespoon extra virgin olive oil
  • 3 cloves garlic
  • 3 cups spinach
  • 1 cup low-fat mozzarella cheese
  • 1 cup non-fat Greek yogurt
  • 1 teaspoon lemon zest
  • 0.25 cup fresh basil
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Bring a large pot of salted water to a boil over high heat. Add the whole grain spaghetti and cook according to package instructions until al dente, about 8-10 minutes.

Step 2

Meanwhile, in a large non-stick skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute until fragrant, being careful not to burn it.

Add the spinach to the skillet and sauté for 2-3 minutes until wilted. Remove from heat.
