Ingredients

  • 4 medium Yukon Gold potatoes
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 cup Unsweetened almond milk
  • 1 cup Low-fat cheddar cheese, shredded
  • 1 cup Plain Greek yogurt
  • 2 tablespoons Chives, chopped
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Smoked paprika

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and thinly slice the Yukon Gold potatoes and set them aside in a bowl of cold water to prevent browning.

Step 3

In a medium saucepan over medium heat, add the olive oil and minced garlic. Sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 4

Add the almond milk to the saucepan and bring to a gentle simmer. Remove from heat.

Step 5

Drain the sliced potatoes and pat them dry with a clean kitchen towel.

Step 6

In a large mixing bowl, combine the potato slices with the warm garlic-infused almond milk, 3/4 cup of the shredded low-fat cheddar cheese (reserving the rest), plain Greek yogurt, salt, black pepper, and smoked paprika. Stir gently to coat the potatoes.

Step 7

Transfer the mixture to a baking dish (approximately 9x13 inches) and spread it out evenly.

Step 8

Sprinkle the reserved cheddar cheese over the top of the potatoes.

Step 9

Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

Step 10

Remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly, and the potatoes are tender when pierced with a fork.

Step 11

Garnish with chopped chives before serving.

Step 12

Serve warm as a side dish that complements your favorite heart-healthy main courses.
