Ingredients

  • 10 sheets whole wheat phyllo dough sheets
  • 4 cups fresh spinach leaves, chopped
  • 1 cup low-fat feta cheese, crumbled
  • 0.5 cup low-fat cottage cheese
  • 2 large egg whites
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons fresh dill, chopped
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt
  • 2 tablespoons sesame seeds

Directions

Step 1

Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook for about 5 minutes until soft.

Step 3

Add the minced garlic and chopped spinach to the onion and cook for another 3 minutes until the spinach is wilted. Remove from heat and let it cool slightly.

Step 4

In a large mixing bowl, combine the cooked spinach mixture, low-fat feta cheese, low-fat cottage cheese, egg whites, fresh dill, black pepper, and salt. Mix well to combine.

Step 5

Lay out one sheet of whole wheat phyllo dough on a clean surface and lightly brush with some of the remaining olive oil. Place another sheet on top and brush with olive oil again.

Cut the stacked phyllo sheets into 3-inch wide strips. Place about 1 tablespoon of the spinach and cheese filling at the end of each strip.

Step 7

Fold the corner of the dough over the filling to form a triangle, and then continue folding the strip in a triangular pattern, like folding a flag. Repeat with the remaining strips.

Step 8

Place the filled triangles on the prepared baking sheet. Brush the tops lightly with olive oil and sprinkle with sesame seeds.

Step 9

Bake in the preheated oven for 20-25 minutes, or until the borekas are golden brown and crispy.

Step 10

Remove from the oven and cool for a few minutes before serving. Serve warm or at room temperature.
