Ingredients

  • 1.5 cups whole wheat flour
  • 2 teaspoons baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon sea salt
  • 0.75 cup reduced-fat sharp cheddar cheese
  • 0.25 cup olive oil
  • 0.75 cup low-fat buttermilk

Directions

Step 1

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together whole wheat flour, baking powder, baking soda, and sea salt until well combined.

Step 3

Add the reduced-fat sharp cheddar cheese to the flour mixture and toss to coat the cheese evenly.

Step 4

In a separate small bowl, whisk together olive oil and low-fat buttermilk.

Step 5

Make a well in the center of the dry ingredients and pour the wet ingredients into the well.

Step 6

Gently stir together until a soft dough forms. Be careful not to overmix.

Step 7

Turn the dough out onto a floured surface and gently knead it a few times until it comes together.

Step 8

Pat the dough into a rectangle about 1 inch thick. Use a round cutter or the rim of a glass to cut out biscuits, re-forming the scraps as needed.

Step 9

Place the biscuits onto the prepared baking sheet about 1 inch apart.

Step 10

Bake in the preheated oven for 12-15 minutes, or until the tops are golden brown.

Step 11

Remove from the oven and allow to cool slightly on a wire rack before serving.

Step 12

Enjoy the biscuits warm as they are or with a heart-healthy spread.
