Ingredients

  • 500 grams Cherry tomatoes
  • 2 tablespoons Olive oil
  • 2 cloves Garlic
  • 10 leaves Fresh basil
  • 1 tablespoon Balsamic vinegar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Start by washing the cherry tomatoes and pat them dry with a clean kitchen towel. For larger cherry tomatoes, consider halving them to ensure even cooking.

Step 2

Peel and mince the garlic cloves. Set aside.

Step 3

Heat a large non-stick skillet or cast-iron pan over medium-high heat. Add the olive oil and swirl it around to coat the bottom of the pan.

Step 4

Once the oil is hot, add the cherry tomatoes in a single layer. Allow them to cook undisturbed for about 3-4 minutes, or until they start to blister and char.

Step 5

Gently shake the pan or use a spatula to turn the tomatoes over, ensuring they char on multiple sides. Cook for another 3-4 minutes.

Step 6

Add the minced garlic and cook for an additional 1 minute, stirring continuously to prevent the garlic from burning.

Step 7

Remove the pan from the heat and add the balsamic vinegar, salt, and black pepper. Toss the tomatoes gently to coat them in the balsamic and seasonings.

Step 8

Finely chop the fresh basil leaves. Sprinkle the chopped basil over the charred tomatoes.

Step 9

Serve the charred tomatoes warm or at room temperature as a side dish, or use them as a topping for salads, grilled chicken, or fish.
