Ingredients

  • 2 large Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Ground black pepper
  • 0.25 teaspoon Salt
  • 0.5 pound Lean flank steak
  • 2 tablespoons Low-sodium soy sauce
  • 1 tablespoon Lime juice
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 cup Reduced-fat cheddar cheese
  • 1 cup Diced tomatoes
  • 1 medium Avocado
  • 0.25 cup Fresh cilantro
  • 2 Green onions

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

Peel and cut the sweet potatoes into fries, about 1/4 inch thick.

Step 3

In a large bowl, toss the sweet potato fries with olive oil, garlic powder, paprika, ground black pepper, and salt.

Step 4

Spread the fries in a single layer on a baking sheet lined with parchment paper.

Step 5

Bake the sweet potato fries for 25-30 minutes, flipping halfway, until crispy and golden brown.

Step 6

While the fries bake, combine low-sodium soy sauce, lime juice, cumin, and chili powder in a bowl to make the marinade.

Step 7

Place the flank steak in the marinade, ensuring it's well coated. Let it marinate for at least 10 minutes.

Step 8

Preheat a grill or grill pan over medium-high heat. Once hot, grill the steak for 3-4 minutes on each side or until done to your liking.

Step 9

Remove the steak from the heat and let it rest for 5 minutes before slicing thinly against the grain.

Step 10

Once the fries are done, transfer them to a large serving platter.

Step 11

Top the fries with slices of grilled steak, and sprinkle the reduced-fat cheddar cheese evenly on top.

Step 12

Garnish with diced tomatoes, slices of avocado, chopped fresh cilantro, and sliced green onions.

Step 13

Serve immediately and enjoy your heart-healthy carne asada fries!
