Ingredients

  • 1 cup Brown rice
  • 2 cups Water
  • 2 large Eggs
  • 2 tablespoons Olive oil
  • 1 cup Fresh spinach
  • 0.5 cup Sun-dried tomatoes
  • 0.5 cup Low-fat feta cheese
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the brown rice under cold water to remove excess starch.

Step 2

In a medium saucepan, bring 2 cups of water to a boil. Add the brown rice, cover, and simmer for 30-35 minutes until rice is tender and water is absorbed.

Preheat your oven to 350°F (175°C) and lightly grease a baking sheet with olive oil.

In a large bowl, beat the eggs and blend in olive oil until combined.
