  • 4 pieces Whole grain sandwich rolls
  • 2 pieces Boneless, skinless chicken breasts
  • 240 ml Low-sodium chicken broth
  • 1 tablespoon Olive oil
  • 1 piece Garlic clove, minced
  • 2 tablespoons Lemon juice
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Freshly ground black pepper
  • 0.25 teaspoon Salt
  • 1 piece Red bell pepper, thinly sliced
  • 0.5 piece Cucumber, thinly sliced
  • 60 grams Fresh spinach leaves
  • 2 tablespoons Dijon mustard

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Place the chicken breasts in a baking dish. Pour the low-sodium chicken broth over them.

Step 3

Drizzle the chicken with olive oil and sprinkle with minced garlic, lemon juice, fresh thyme leaves, freshly ground black pepper, and salt.
