Ingredients

  • 500 grams Broccoli florets
  • 60 grams Almonds
  • 1 tablespoon Olive oil
  • 1 medium, chopped Onion
  • 2 cloves, minced Garlic
  • 750 milliliters Low-sodium vegetable broth
  • 250 milliliters Almond milk (unsweetened)
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Salt
  • 1 tablespoon Lemon juice
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Toast the almonds in a dry skillet over medium heat, stirring frequently, for 5-7 minutes or until lightly browned and fragrant. Set aside to cool.

Step 2

In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook, stirring occasionally, for 4-5 minutes until the onion is soft and translucent.

Add minced garlic to the pot and cook for an additional 1 minute until fragrant.
