  • 500 grams lean beef sirloin tips
  • 1 tablespoon olive oil
  • 1 large onion, chopped

  • 2 medium carrot, sliced
  • 2 medium celery stalks, sliced
  • 500 milliliters low-sodium beef broth
  • 120 milliliters red wine (optional)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 whole bay leaf
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon salt substitute

Directions

Step 1

Pat the beef sirloin tips dry with paper towels and season lightly with salt substitute and black pepper.

Step 2

In a large Dutch oven or a deep skillet, heat the olive oil over medium-high heat. Once hot, add the beef tips and sear until browned on all sides, about 4-5 minutes. Remove the beef tips from the pot and set aside.

In the same pot, add the chopped onion, minced garlic, sliced carrots, and celery. Cook until the vegetables begin to soften, about 5 minutes.
