Ingredients

  • 450 grams Lean ground turkey
  • 120 grams Quinoa (cooked)
  • 2 pieces Egg whites
  • 60 grams Whole wheat breadcrumbs
  • 1 medium Onion, finely chopped
  • 3 pieces Garlic cloves, minced
  • 30 grams Fresh parsley, chopped
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Low-sodium soy sauce
  • 1 teaspoon Oregano, dried
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 2

In a large bowl, mix the ground turkey, cooked quinoa, egg whites, and breadcrumbs until well integrated.

Step 3

Add the chopped onion, garlic, parsley, Dijon mustard, soy sauce, oregano, and black pepper to the mixture. Stir until all ingredients are evenly combined.

Step 4

Form the mixture into small golf ball-sized meatballs, placing them on the prepared baking sheet.

Step 5

Brush or drizzle the olive oil over the meatballs to help them brown in the oven.

Step 6

Bake the meatballs in the preheated oven for 20-25 minutes or until they are cooked through and golden brown on the outside.

Step 7

Check for doneness by cutting into a meatball to ensure it’s not pink inside or use a meat thermometer to ensure an internal temperature of 165°F (74°C).

Step 8

Serve the meatballs hot with your choice of side, such as whole-grain pasta or a fresh salad.
