Ingredients

  • 2 cups Whole wheat flour
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.25 cup Cold unsalted butter
  • 0.75 cup Skim milk
  • 8 ounces Low-fat turkey sausage
  • 1 tablespoon Olive oil
  • 2 tablespoons All-purpose flour
  • 1 cup Low-sodium chicken broth
  • 1 cup Skim milk
  • 0.5 teaspoon Freshly ground black pepper
  • 0.5 teaspoon Garlic powder
  • 1 tablespoon Chopped fresh parsley (optional)

Directions

Step 1

Preheat the oven to 425°F (220°C).

Step 2

In a large bowl, mix together whole wheat flour, baking powder, baking soda, and salt.

Step 3

Cut in the cold unsalted butter using a pastry cutter or fork until it resembles coarse crumbs.

Step 4

Make a well in the center of the flour mixture and pour in the 3/4 cup of skim milk. Stir until the dough begins to come together.

Step 5

Turn the dough onto a floured surface and knead gently a few times until smooth. Roll to 1/2-inch thickness and cut into biscuits using a round cutter.

Step 6

Place biscuits on a baking sheet lined with parchment paper and bake in the preheated oven for 10-12 minutes, or until golden brown.

Step 7

While the biscuits cook, prepare the sausage gravy. Heat olive oil in a large skillet over medium heat.

Step 8

Crumble the low-fat turkey sausage into the skillet and cook until browned, about 6 to 8 minutes. Remove sausage and set aside.

Step 9

In the same skillet, sprinkle all-purpose flour over remaining oil and sausage drippings and stir to form a roux. Cook the roux for about 1 minute, stirring constantly.

Step 10

Gradually whisk in the low-sodium chicken broth and 1 cup skim milk, ensuring no lumps form.

Step 11

Continue cooking over medium heat until the gravy thickens, about 3-5 minutes.

Step 12

Stir in the cooked sausage, freshly ground black pepper, and garlic powder. Adjust seasoning to taste.

Step 13

To serve, split the warm biscuits and ladle sausage gravy over the top. Garnish with chopped fresh parsley if desired.
