Ingredients

  • 500 grams fresh okra
  • 2 tablespoons olive oil
  • 1 large, finely chopped onion
  • 2 medium, finely chopped tomato
  • 3 cloves, minced garlic
  • 1 inch piece, minced ginger
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon or to taste salt
  • 2 tablespoons, chopped fresh cilantro
  • 1 tablespoon lemon juice

Directions

Step 1

Wash the okra under running water and pat them dry with a clean kitchen towel or paper towels. Trim the ends and cut each okra into 1-inch pieces.

Step 2

Heat the olive oil in a non-stick pan over medium heat. Add the chopped onion and sauté until it turns translucent, about 5 minutes.

Add the minced garlic and ginger to the pan and sauté for another 2 minutes until they are fragrant.
