Ingredients

  • 4 medium beets
  • 2 tbsp olive oil
  • 6 cups mixed salad greens
  • 3 oz goat cheese
  • 1 cup walnuts
  • 1 tbsp balsamic vinegar
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the beets thoroughly and dry them with a towel. Trim the tops and ends of the beets.

Step 3

Place the beets on a sheet of aluminum foil, drizzle with 1 tablespoon of olive oil, wrap tightly, and place them on a baking sheet.

Roast the beets in the oven for 40-45 minutes or until they can be easily pierced with a fork. Remove from oven and let them cool slightly.

While the beets are roasting, toast the walnuts in a small skillet over medium heat for 3-5 minutes until lightly golden and fragrant. Set aside to cool.
