  • 4 cups low-sodium beef broth
  • 1 can (14.5 ounces) diced tomatoes, no salt added
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large heavy-bottomed pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat.

Step 2

Add the beef cubes in batches, searing each side until browned, about 4-5 minutes per batch. Transfer the browned beef to a plate and set aside.

Step 3

Reduce the heat to medium and add the remaining tablespoon of olive oil to the pot. Add the chopped onion and cook until translucent, about 5 minutes.
