Ingredients

  • 4 pieces (about 4 oz each) Lean beef fillets
  • 0.5 cup Whole wheat flour
  • 0.5 teaspoon Ground black pepper
  • 0.5 teaspoon Garlic powder
  • 2 large Egg whites
  • 1 tablespoon Water
  • 1 cup Whole wheat breadcrumbs
  • 0.25 cup Parmesan cheese, grated
  • 1 teaspoon Paprika
  • 2 tablespoons Olive oil
  • 4 pieces Lemon wedges

Directions

Step 1

Place each beef fillet between two sheets of plastic wrap or parchment paper and use a meat mallet to pound them to about 1/4 inch thickness.

Step 2

In a shallow dish, combine whole wheat flour, ground black pepper, and garlic powder.

Step 3

In another dish, beat the egg whites with water until well mixed.

Step 4

In a third dish, mix whole wheat breadcrumbs with grated Parmesan cheese and paprika.

Step 5

Coat each beef fillet in the flour mixture, shaking off any excess.

Step 6

Dip the floured beef in the egg white mixture, ensuring it is fully covered.

Step 7

Place the beef in the breadcrumb mixture, pressing down to ensure an even coating on all sides.

Step 8

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

Step 9

Cook two of the breaded beef fillets for 4-5 minutes on each side or until golden brown and cooked through. Repeat with remaining tablespoon of olive oil and beef fillets.

Step 10

Once cooked, place the schnitzels on a paper towel-lined plate to drain any excess oil.

Step 11

Serve warm with lemon wedges on the side for squeezing over the schnitzel just before eating.
