Ingredients

  • 250 grams lean ground beef
  • 1 cup brown rice
  • 8 pieces large green cabbage leaves
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon olive oil
  • 2 cloves minced garlic
  • 1 teaspoon grated ginger
  • 2 stalks green onions, sliced
  • 1 tablespoon sesame seeds
  • 1 tablespoon rice vinegar
  • 1 medium carrot, finely shredded

Directions

Step 1

Rinse the brown rice under cold water. In a medium saucepan, combine rice with 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes until tender.

Step 2

While rice is cooking, bring a large pot of water to a boil. Submerge the cabbage leaves for 1-2 minutes until just softened. Remove and set aside to cool.

Step 3

In a large non-stick skillet, heat olive oil over medium heat. Add garlic and ginger, sauté for 1 minute until fragrant.

Step 4

Add the lean ground beef to the skillet. Cook, breaking apart with a spoon, until browned and cooked through, about 5-7 minutes.

Stir in the cooked rice, soy sauce, rice vinegar, green onions, and shredded carrot. Cook for another 2 minutes to combine flavors. Remove from heat.
