Ingredients

  • 8 ounces lean ground beef (90% lean or higher)
  • 4 8-inch whole wheat tortillas
  • 1 cup low-sodium black beans, drained and rinsed
  • 1 medium red bell pepper, diced
  • 0.5 cup red onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cups baby spinach, chopped
  • 1 cup reduced-fat shredded cheddar cheese
  • 2 teaspoons olive oil
  • 1 teaspoon ground cumin
  • 0.5 teaspoon chili powder
  • 0.25 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

Step 1

In a large skillet, heat 1 teaspoon of olive oil over medium heat. Add the ground beef and cook until browned and fully cooked, about 5-7 minutes. Drain any excess fat.

Step 2

Add the red onion, red bell pepper, and garlic to the beef in the skillet. Saute until the vegetables are tender, about 3-4 minutes.

Stir in the black beans, cumin, and chili powder. Cook for an additional 2 minutes to heat the beans through.
