  • 500 grams Lean ground beef
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 3 Garlic cloves
  • 2 medium Carrots
  • 2 Celery stalks
  • 1 cup Frozen peas
  • 1 cup Low-sodium beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 4 medium Potatoes
  • 0.5 cup Skim milk
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Chopped fresh parsley

Directions

Step 1

Preheat the oven to 200°C (400°F).

Step 2

Peel and dice the potatoes. Place them in a pot of boiling water and cook until tender, about 15 minutes.

Step 3

While the potatoes are cooking, heat 1 tablespoon of olive oil in a large pan over medium heat.

Add the chopped onion, minced garlic, diced carrots, and sliced celery to the pan. Sauté for 5 minutes or until the vegetables are beginning to soften.

Increase the heat to medium-high and add the lean ground beef to the pan. Cook until browned, breaking it apart as it cooks, about 7 minutes.
