Ingredients

  • 300 grams Beef tenderloin
  • 2 tablespoons Olive oil
  • 1 tablespoon Lemon juice
  • 2 cups Arugula leaves
  • 25 grams Parmesan cheese, shaved
  • 2 tablespoons Capers
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground
  • 10 leaves Fresh basil leaves

Directions

Step 1

Place the beef tenderloin in the freezer for about 15-20 minutes to make it easier to slice thinly.

Step 2

While the beef is chilling, prepare the dressing by combining olive oil and lemon juice in a small bowl. Whisk together until emulsified. Season with a pinch of salt and freshly ground black pepper.

Step 3

Remove the beef from the freezer and use a very sharp knife to slice it as thinly as possible. Arrange the slices on a large platter or individual plates, slightly overlapping each piece.

Step 4

Drizzle the olive oil and lemon juice dressing over the beef slices.

Step 5

In a separate bowl, lightly toss the arugula leaves with a small amount of the dressing.

Step 6

Distribute the arugula evenly over the beef and sprinkle with shaved Parmesan, capers, and fresh basil leaves.

Step 7

Season the carpaccio with a touch more salt and freshly ground black pepper to taste.

Step 8

Serve immediately as a delicate and flavorful appetizer.
