  • 2 pounds Lean beef chuck
  • 4 cups Low-sodium beef broth

  • 2 Dried ancho peppers
  • 1 White onion
  • 6 Garlic cloves
  • 2 medium Tomatoes
  • 2 tablespoons Apple cider vinegar
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 Bay leaf
  • 1 bunch Cilantro
  • 12 Corn tortillas
  • 2 tablespoons Avocado oil
  • 2 Fresh lime
  • 1 cup Low-fat cheese
  • 1 cup Sliced radishes

Directions

Step 1

Start by trimming any visible fat from the lean beef chuck and cut it into large chunks.

Step 2

Deseed the guajillo and ancho peppers and soak them in hot water for about 15 minutes.

Meanwhile, in a large pot, bring the low-sodium beef broth to a simmer.
