  • 250 grams Lean ground beef
  • 1 tablespoon Olive oil
  • 1 medium, diced Onion
  • 2 cloves, minced Garlic
  • 1 medium, diced Red bell pepper
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • 1 cup Cooked brown rice
  • 400 grams, drained and rinsed Canned black beans
  • 0.5 cup Salsa
  • 0.25 cup, chopped Cilantro
  • 2 tablespoons Lime juice
  • 4 large Whole wheat tortillas
  • 1 ripe, sliced Avocado
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Heat olive oil in a large skillet over medium heat.

Step 2

Add diced onion and minced garlic to the skillet and sauté until the onion is translucent, about 5 minutes.

Step 3

Add lean ground beef to the skillet and cook until browned, breaking it up with a spatula as it cooks, about 7-8 minutes.

Stir in the diced red bell pepper, cumin, chili powder, salt, and black pepper. Cook for another 5 minutes until the bell pepper is tender.
