  • 500 grams lean beef stew meat
  • 1 medium onion, diced
  • 3 units garlic cloves, minced
  • 2 medium carrots, diced
  • 2 units celery stalks, diced
  • 250 grams button mushrooms, sliced
  • 2 cups low-sodium beef broth
  • 2 tablespoons tomato paste
  • 1 tablespoon low-salt soy sauce
  • 0.5 teaspoon pepper
  • 1 teaspoon dried thyme
  • 2 tablespoons whole wheat flour
  • 1 tablespoon water
  • 1 9-inch prepared whole wheat pie crust

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat 1 tablespoon of olive oil in a large pan over medium heat.

Step 3

Add the beef stew meat in batches, browning each batch for about 5 minutes, and then transfer to a plate.

In the same pan, add the remaining tablespoon of olive oil. Sauté the onions, garlic, carrots, and celery for about 5 minutes or until softened.
