  • 2 cups bean sprouts
  • 2 cups baby spinach
  • 2 tablespoons low-sodium soy sauce
  • 2 sliced green onions
  • 0.5 cup, chopped fresh cilantro
  • 0.5 teaspoon black pepper
  • 1 cut into wedges lime

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, minced garlic, sliced carrot, and celery to the pot. Sauté for about 5 minutes, or until the vegetables are softened.

Pour in the low-sodium vegetable broth and add the grated ginger. Bring the mixture to a boil.
