Ingredients

  • 3 cups Yukon Gold potatoes, peeled and cubed
  • 1 cup Whole wheat flour
  • 1 cup Chickpea flour (Besan)
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Garam masala
  • 1 medium Green chili, finely chopped
  • 1 teaspoon Ginger, grated
  • 10 leaves Curry leaves, finely chopped
  • 1 teaspoon Salt
  • 2 tablespoons Sunflower oil
  • 1 cup Water
  • 2 cups Olive oil (for frying)

Directions

Step 1

Place the peeled and cubed potatoes in a pot of boiling water. Cook until fork-tender, about 10-12 minutes.

Step 2

Drain and mash the potatoes in a large bowl. Set aside.

In a small frying pan, heat the sunflower oil over medium heat. Add mustard seeds and allow them to splutter.

Add grated ginger, chopped green chili, curry leaves, turmeric, coriander powder, garam masala, and a pinch of salt. Cook for 1-2 minutes until aromatic.
