Ingredients

  • 4 pieces lean turkey sausages
  • 2 large sweet potatoes
  • 2 tablespoons extra virgin olive oil
  • 1 large onion
  • 2 cloves garlic
  • 1 cup low-sodium vegetable broth
  • 1 tablespoon whole grain mustard
  • 1 teaspoon fresh thyme
  • 1 teaspoon low-sodium soy sauce
  • 0.5 teaspoon ground black pepper
  • 0.25 cup skim milk
  • 2 tablespoons parsley

Directions

Step 1

Peel the sweet potatoes and cut them into large chunks. Place in a pot of boiling water and cook for about 20 minutes until tender.

Step 2

While the sweet potatoes are cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the turkey sausages and cook until browned and cooked through, about 12-15 minutes. Remove from skillet and keep warm.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Add the sliced onion and sauté until they are soft and caramelized, about 8-10 minutes.

Add minced garlic to the caramelized onions, cooking for an additional 1-2 minutes until fragrant.
