Ingredients

  • 500 grams lean beef
  • 2 large egg whites
  • 3 pieces garlic cloves
  • 2 tablespoons low-sodium soy sauce
  • 1 teaspoon black pepper
  • 2 tablespoons cornstarch
  • 50 grams oats, finely ground
  • 1 liter low-sodium beef broth
  • 2 cups bok choy, chopped
  • 2 pieces carrots, thinly sliced
  • 1 medium onion, finely chopped
  • 1 tablespoon ginger, grated
  • 2 stalks celery, sliced
  • 2 tablespoons spring onions, chopped
  • 0.5 teaspoon salt

Directions

Step 1

In a food processor, combine lean beef, egg whites, garlic, soy sauce, black pepper, cornstarch, and oats. Process until well mixed and the oats are fully incorporated.

Step 2

With wet hands, form the mixture into small meatballs about 1 inch in diameter.

Step 3

In a large pot, bring the beef broth to a boil. Carefully drop the meatballs into the boiling broth.

Step 4

Reduce the heat to a simmer and let the meatballs cook for about 15 minutes or until they float to the surface.

Step 5

In a separate pan, sauté the chopped onion, grated ginger, and celery until the onions are translucent.

Step 6

Add the sautéed vegetables to the pot with the meatballs, along with the chopped bok choy and sliced carrots.

Step 7

Simmer for another 10 minutes, or until the vegetables are tender but still vibrant in color.

Step 8

Adjust the seasoning with a little salt, if necessary, considering the heart-healthy aspect of the dish.

Step 9

Serve the soup hot, garnished with chopped spring onions.
