Ingredients

  • 12 ounces Whole wheat tortellini
  • 1 tablespoon Olive oil
  • 3 Garlic cloves, minced
  • 28 ounces Canned crushed tomatoes, no salt added
  • 0.5 cup Low-sodium vegetable broth
  • 0.5 cup Low-fat Greek yogurt
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 0.25 teaspoon Red pepper flakes
  • 0.25 cup Grated Parmesan cheese, optional
  • 4 cups Baby spinach, fresh
  • 0.25 cup Fresh basil leaves, chopped

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the whole wheat tortellini according to package instructions until al dente. Drain and set aside.

In a large saucepan over medium heat, add the olive oil. Sauté the minced garlic until fragrant, approximately 1 minute.
