Ingredients

  • 4 pieces Red Snapper fillets
  • 2 tablespoons Olive oil
  • 1 whole Fresh lemon
  • 3 whole Garlic cloves
  • 2 tablespoons Fresh thyme
  • 2 tablespoons Fresh parsley
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Cherry tomatoes

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Rinse the snapper fillets under cold water and pat dry with a paper towel.

Step 3

Place the fillets in a baking dish. Drizzle them with olive oil on both sides.

Step 4

Zest the lemon and set aside. Slice the lemon thinly.

Step 5

Peel and thinly slice the garlic cloves.

Sprinkle the lemon zest, sliced garlic, salt, and pepper evenly over the fillets.
