Ingredients

  • 4 large russet potatoes
  • 1 tablespoon olive oil
  • 6 slices turkey bacon
  • 1 cup plain Greek yogurt
  • 2 tablespoons chopped fresh chives
  • 2 tablespoons chopped fresh parsley
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 cup grated low-fat cheddar cheese

Directions

Step 1

Preheat the oven to 400°F (200°C).

Step 2

Wash and scrub the potatoes under running water to remove any dirt. Pat them dry with a paper towel.

Step 3

Pierce each potato a few times with a fork to allow steam to escape during baking.

Step 4

Rub the potatoes with olive oil and sprinkle with salt.

Step 5

Place the potatoes on a baking sheet and bake in the preheated oven for about 50 to 60 minutes, or until tender and the skin is crispy.

Step 6

While the potatoes are baking, cook the turkey bacon in a skillet over medium heat until crispy. Once cooked, transfer them to a plate lined with paper towels to drain any excess fat, then crumble the bacon into smaller pieces.

Step 7

Once the potatoes are done, remove them from the oven and let them cool for a few minutes.

Step 8

Cut a slit lengthwise across the top of each potato, then gently squeeze the ends to open them up.

Step 9

Spoon a quarter of the Greek yogurt into each potato, followed by a sprinkling of black pepper.

Step 10

Top each potato with crumbled turkey bacon, grated cheddar cheese, chopped chives, and parsley.

Step 11

Serve immediately while the potatoes are still warm and the cheese is melty. Enjoy your heart-healthy meal!
