Ingredients

  • 4 slices low-sodium turkey bacon
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 30 ounces canned low-sodium navy beans, drained and rinsed
  • 14.5 ounces canned no-salt-added diced tomatoes
  • 2 tablespoons tomato paste
  • 2 tablespoons molasses
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

In a large skillet, cook the turkey bacon slices over medium heat until they are crispy, about 5-7 minutes. Remove from the skillet and drain on paper towels. Once cooled, crumble the bacon and set aside.

Step 3

In the same skillet, add olive oil and heat over medium heat. Add the chopped onion and cook, stirring occasionally, until the onion is soft and translucent, about 5 minutes.

Step 4

Stir in the minced garlic and cook for another 1 minute until fragrant.

Step 5

In a large mixing bowl, combine the cooked onion and garlic with the drained navy beans, diced tomatoes, tomato paste, molasses, Dijon mustard, and apple cider vinegar. Stir until well combined.

Step 6

Add the smoked paprika and black pepper, and mix again to incorporate all the ingredients evenly.

Step 7

Transfer the bean mixture into a 2-quart baking dish and spread it out evenly.

Step 8

Sprinkle the crumbled turkey bacon over the top of the bean mixture.

Step 9

Cover the baking dish with foil and place it in the preheated oven. Bake for 30 minutes.

Step 10

Remove the foil and bake for an additional 10-15 minutes, or until the top is slightly caramelized and the mixture is heated through.

Step 11

Remove from the oven and let it rest for a few minutes before serving.

Step 12

Garnish with fresh parsley, if desired, and serve warm.
