Ingredients

  • 1 Whole grain English muffin
  • 2 slices Turkey bacon
  • 2 large Egg whites
  • 1 slice Low-fat cheddar cheese
  • 0.25 medium Avocado
  • 1 teaspoon Extra virgin olive oil
  • 0.5 cup Spinach
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat a non-stick skillet over medium heat and add 1 teaspoon of extra virgin olive oil.

Step 2

Place the turkey bacon slices in the skillet and cook until crispy, about 3-4 minutes per side. Once cooked, set aside on a paper towel to drain excess oil.

Step 3

While the bacon is cooking, slice the whole grain English muffin in half and toast it to your desired level of crispness.

Step 4

In the same skillet used for the bacon, pour in the egg whites and season with salt and black pepper. Cook for about 3 minutes, stirring occasionally until the eggs are fully set but still moist.
