Ingredients

  • 6 large eggs
  • 3 cups egg whites
  • 0.5 cup unsweetened almond milk
  • 4 slices low-fat turkey bacon
  • 1 cup baby spinach
  • 0.5 cup low-fat cheddar cheese
  • 0.5 cup red bell pepper, diced
  • 0.25 teaspoon black pepper
  • 0.25 teaspoon salt
  • 2 tablespoons green onions, chopped
  • 0 olive oil spray

Directions

Step 1

Preheat the oven to 350°F (175°C) and lightly spray a 12-cup muffin tin with olive oil spray.

Step 2

In a medium pan, cook the turkey bacon over medium heat until crisp. Remove from the pan, drain on paper towels, and crumble into small pieces.
