Ingredients

  • 2 cups whole wheat biscuit mix
  • 1 cup Greek yogurt, non-fat
  • 4 slices low-sodium turkey bacon
  • 4 units large eggs, free-range
  • 1 cup low-fat cheddar cheese, shredded
  • 0.5 cup unsweetened almond milk
  • 1 cup fresh spinach, chopped
  • 1 tablespoon olive oil
  • 0.5 teaspoon black pepper
  • 1 teaspoon baking powder
  • 0.25 teaspoon salt

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

In a mixing bowl, combine the whole wheat biscuit mix, Greek yogurt, and baking powder. Stir until it forms a dough.

Step 3

Dust a clean, flat surface with a little flour and knead the dough lightly. Roll it out to about 1/2-inch thickness.

Using a circular cutter or the rim of a glass, cut out dough rounds. Place these on a baking sheet lined with parchment paper.
