Ingredients

  • 8 large Egg whites
  • 4 slices Turkey bacon, cooked and crumbled
  • 1 cup Gruyere cheese, finely grated
  • 1 cup Fresh spinach, chopped
  • 1 small Red bell pepper, diced
  • 2 stalks Green onions, chopped
  • 0.5 cup Low-fat milk
  • 1 teaspoon Olive oil
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 teaspoon Baking powder

Directions

Step 1

Preheat the oven to 350°F (175°C). Lightly grease a 12-cup muffin tin with olive oil or line it with silicone muffin liners.

Step 2

In a large mixing bowl, whisk together egg whites, low-fat milk, salt, black pepper, and baking powder until well combined.

Step 3

In a non-stick skillet over medium heat, cook the turkey bacon slices until crispy. Remove and let cool, then crumble into small pieces.

Step 4

In the same skillet, add 1 teaspoon of olive oil and sauté the chopped spinach and diced red bell pepper for about 3 minutes until the spinach is wilted and the bell pepper is slightly tender.
