Ingredients

  • 4 pieces Whole grain English muffins
  • 8 large Egg whites
  • 8 slices Lean turkey bacon
  • 1 cup Baby spinach
  • 1 cup Low-fat cheddar cheese
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 350°F (175°C).

Step 2

Slice the whole grain English muffins in half and place them on a baking sheet, cut side up.

Step 3

In a large non-stick skillet, heat the olive oil over medium heat.

Step 4

Add the turkey bacon slices to the skillet and cook until crisp, about 3 minutes on each side. Remove and set aside on paper towels to drain any excess oil.

Using the same skillet, add the egg whites and scramble them gently. Cook until just set, about 2-3 minutes.
