Ingredients

  • 500 grams boneless, skinless chicken breasts
  • 400 ml low-fat coconut milk

  • 1 teaspoon turmeric powder
  • 1 inch fresh ginger
  • 3 garlic cloves
  • 2 lemongrass stalks
  • 1 small onion
  • 1 red chili (de-seeded)
  • 4 kaffir lime leaves
  • 1 tablespoon canola oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 100 grams baby spinach

Directions

Step 1

Cut the chicken breasts into bite-sized pieces and set aside.

Step 2

Peel and thinly slice the ginger and garlic. Trim the lemongrass and smash the stalks with the back of a knife. Finely chop the onion and the de-seeded red chili.

Step 3

In a blender or food processor, combine the ginger, garlic, turmeric powder, lemongrass, onion, and chili. Blend into a smooth paste, adding a little water if necessary.

Heat the canola oil in a large pan over medium heat. Add the paste and fry for about 5 minutes, stirring continuously, until fragrant.
