Ingredients

  • 2 medium Aubergine (eggplant)
  • 2 tablespoons Olive oil
  • 3 large Garlic cloves
  • 1 whole Lemon
  • 2 tablespoons Tahini
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 2 tablespoons Parsley

Directions

Step 1

Preheat your oven to 400°F (200°C).

Step 2

Wash the aubergines and pierce them multiple times with a fork to allow steam to escape during roasting.

Step 3

Place the aubergines on a baking sheet and roast them in the preheated oven for about 40-50 minutes until the flesh is soft and the skin is charred.

Step 4

While the aubergines are roasting, peel the garlic cloves and mince them finely.

Step 5

Juice the lemon and set aside.

Once the aubergines are done roasting, remove them from the oven and let them cool for 10 minutes.
