Ingredients

  • 1 cup Cocoa powder, unsweetened
  • 0.5 cup Coconut oil
  • 0.25 cup Erythritol sweetener
  • 0.5 cup Natural peanut butter, unsweetened
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Sea salt
  • 2 ounces Dark chocolate (85% cacao or higher), finely chopped

Directions

Step 1

Line a mini muffin tin with 12 paper liners.

Step 2

In a small saucepan over low heat, combine the coconut oil and cocoa powder. Stir continuously until completely smooth and melted.

Step 3

Add the erythritol sweetener to the cocoa mixture and stir until it is fully dissolved. Remove from heat.

Step 4

Using a tablespoon, pour a small amount of the chocolate mixture into the bottom of each liner, just enough to coat the bottom, and place the tray in the freezer for 5 minutes.

Meanwhile, in a separate bowl, mix together the peanut butter, vanilla extract, and sea salt until well combined.

Remove the tray from the freezer and layer about a teaspoon of the peanut butter mixture on top of each chocolate layer.

Add the chopped dark chocolate into the remaining chocolate mixture in the saucepan and stir until melted and combined.

Spoon the remaining chocolate evenly over the peanut butter layer in each cup.

Place the tray back in the freezer for another 10 minutes until the cups are set.
