Ingredients

  • 1 medium head Cauliflower
  • 2 medium Potatoes
  • 1 tablespoon Olive oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoon Turmeric powder
  • 1 teaspoon Coriander powder
  • 0.5 teaspoon Cumin powder
  • 0.25 teaspoon Red chili powder
  • 1 inch piece Ginger
  • 2 medium Tomatoes
  • 1 small Green chili
  • 2 tablespoons Fresh cilantro
  • 0.5 teaspoon Salt
  • 1 tablespoon Lemon juice

Directions

Step 1

Cut the cauliflower into small florets and wash thoroughly. Peel and dice the potatoes into 1-inch cubes.

Step 2

Finely chop the tomatoes and ginger. Slit the green chili lengthwise.

Step 3

Heat the olive oil in a large non-stick pan over medium heat. Add the cumin seeds and let them sizzle for 30 seconds.

Step 4

Add the ginger and green chili to the pan, sauté for another minute until fragrant.

Step 5

Add the diced potatoes, cauliflower florets, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Stir to coat the vegetables evenly with the spices.

Cover the pan and cook on medium-low heat, stirring occasionally, until the potatoes and cauliflower are tender, about 15 minutes.
