  • 1 large Red onion

  • 1 tsp Dried oregano
  • 1 tsp Smoked paprika
  • 0.5 cup Fresh cilantro
  • 8 small Corn tortillas
  • 2 whole Lime
  • 0.5 tsp Sea salt
  • 0.5 tsp Black pepper

Directions

Step 1

Begin by cutting the chicken breast into thin slices, about 1/4 inch thick, and set aside.

Step 2

Peel and core the pineapple. Dice half into small pieces for marinating and slice the other half into rings for grilling.

Step 3

Thinly slice the red onion and mince the garlic cloves.

Step 4

In a large bowl, combine the olive oil, apple cider vinegar, chili powder, cumin, oregano, smoked paprika, sea salt, and black pepper to create the marinade.
